Celebrating Home - Tasty Taco Soup Style

I'm always on the look out for new recipes - aren't you?  And when my friend, Missy of  Celebrating Home, told me she was making Taco Soup in Celebrating Home's Bean Pot at the party I was attending - why, I was pretty intrigued!

We don't cook in the microwave.  We reheat leftovers in the microwave.  We heat our canned veggies in the microwave - even steaming some in those fancy little steamer bags.  We pop popcorn in the microwave and boil water for the hummingbird feeders.  But C-O-O-K?  Ummm. . . no.  I don't like the flavor that's usually left in meat when cooked too long in the microwave.  But, hey, if Missy says it was good - then I was anxious to try it.

And with a bit of coaxing, I was able to take some photos and blog the whole tastefully easy process.  Check this out!




Bean Pot Taco Soup

1 lb ground beef
1 15 o.z can sweet corn
2 15 oz. cans of red kidney beans
2 10 oz.cans of diced tomatoes or diced tomatoes with green chilis
1/2+ package of Celebrating Home Southwest Chipotle Dip (or 1/8+ cup taco seasoning)- to taste
1 can of water
Frito Chips or Tortilla Chips
Shredded Cheddar Cheese
Sour Cream

Add frozen or thawed ground beef to your bean pot and cook on high in microwave until no pink remains.  You may want to break meat apart with spoon or spatula a couple times during the process.




Remove bean pot from microwave with hot pads (pot will be hot).  Drain excess fat.
Place bean pot on hot pad, or use Bean Pot Basket, to protect counters from heat.  Add corn, beans, tomatoes, and taco seasoning.  Stir to combine all ingredients.



Place bean pot into microwave, cover, and cook for 20 minutes on high.



Remove bean pot from microwave with hot pads and add stir in one can of hot tap water.



Ladle soup into bowl, top with chips, shredded cheddar cheese, and sour cream.  Enjoy!



Missy says:  "You have only used one container to cook in and it can go into the dishwasher!!  Plus your Kitchen does not get real hot!!"       

And you know what else, Missy?  Your Taco Soup is delicious!
