Eggnog without the Glass. . .

Stop!

I know you've got that last bit of eggnog in the refrigerator and though you love the taste, you just don't know if you can drink one. . . more. . . glass. . . .

Well -  for goodness sake, don't throw it away!  I've got a recipe that will use up that eggnog and be a tasty morsel beside.


I-Love-Eggnog Mini Loaves

2-1/4 c flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 c sugar
2 eggs, beaten
1 c eggnog (any commercially prepared brand works fine)
1/2 c butter, melted
2 tsp vanilla extract
2 tsp rum extract







Preheat oven to 350 degrees.
In large bowl, combine flour, baking powder, salt, cinnamon, nutmeg, and sugar.  Create 'bowl' in dry ingredients,


add beaten eggs, eggnog, melted butter, vanilla extract, and rum extract.  Stir into dry ingredients until just moistened.




Pour batter into eight greased 3-3/4" x 2-1/4" mini-mini loaf cups, three greased 5-3/4 x 3" mini loaf pans, or one dozen greased full-sized muffin cups (I do not recommend mini-muffins). 


Bake in 350 degree oven for 30-35 minutes or until a toothpick inserted near the center comes out clean.



Do you remember that nutmeg-sugar mixture that we rolled the Snickedoodles in?  I sprinkled some (about 1/4 - 1/2 tsp per mini-mini loaf) on each loaf of my second batch prior to baking.  I think I'll do that again.  It created a special 'crusty' top on the finished loaves.

Mmmmm. . . .yummy!  What a wonderful way to use up that eggnog:-)
