No Sweat Tomatoes

It's So HOT out there. . .
(How HOT is it?)
That even the tomatoes are sweating. . .

Well, not quite .I'm sure they would be, though, if they could. At 103 degrees, I break out in a sweat just thinking about them hanging outside in the sun.  But they are ripe - red, sweet, juicy, delicious, and just begging to be eaten and enjoyed!

Keep your cool and try this simple side dish with tomatoes,

feta cheese,

black pepper, balsamic vinegarette, and fresh parsley.

No sweat here!

Find a nice sized plate or platter where your tomato slices can lay flat with minimum overlapping. Now, slice your tomatoes (figure about three to four slices per person) and place on your platter. Top with crumbled feta cheese (precise measuring is not only a non-requirement, but frowned upon here. . . ), sprinkle with black pepper, lightly cover with the dressing (any ol' version that you like will do), 'decorate' with parsley and let rest for at least 15 minutes prior to eating.
