Just as I promised - cookies after your veggies!
Chocolate Chip Cookie Bars
1 cup butter - softened
3/4 c white sugar
3/4 c brown sugar - packed
2 eggs
1 tsp vanilla
2-1/4 c flour
1 tsp baking soda
1 cup chocolate chips
Preheat oven to 375.
Cream butter and sugars until smooth
Beat in eggs - one at a time - and stir in vanilla. Add in dry ingredients. Fold in chocolate chips.
Dough will be extremely stiff. Drop into greased 9 x 13 pan.
And spread edge to edge, covering bottom of pan.
Bake 20 - 25 minutes. Not quite ready in that time frame for me this time. . .
or until golden brown - perfect!
Cool to at least room temperature prior to cutting
You can use any kind of chocolate or flavored chips that suit your fancy, and add 1/2 cup of chopped walnuts, or use any flavored extract in place of the vanilla. Some of my variations?
Dark chocolate chips and peppermint extract;
Andes Mint chips;
Dark chocolate chips, orange extract, and chopped walnuts;
milk chocolate chips, 1/2 tsp cinnamon, Mexican vanilla, and chopped walnuts;
white chocolate chips and macadamia nuts;
And the list goes on! What combinations are you hungry for?
