Here's a great cold day meal for a crowd (and if there's something this guest cook knows how to do - that's to cook for a crowd. She has five awesome - now grown- children) that takes no time at all to prepare AND the heat of the oven helps keep you warm:-)
Lizzy's Smothered Steak
Round steak (1-2 per person)
1 large onion
1 jar of spaghetti sauce (and or can or two of diced tomatoes)
salt & pepper to taste
Preheat oven to 350 degrees and grease (or line with foil) a 9 x 13 baking dish. Set aside.
In a frying pan, fry the round steak, seasoned with salt and pepper as preferred,
over medium-high heat
until browned on both sides.
While steak is frying, slice onions
and place on bottom of prepared baking dish.
Just cover with some of the spaghetti sauce.
When steaks are browned, cut in half, if desired,
*hint: To get all of the steak drippings from the pan, pour the undrained can of diced tomatoes into pan and 'swish' around the pan before
pouring onto steaks.
Top with remaining spaghetti sauce.
Cover pan with foil
and place in preheated oven
for an hour or until spaghetti sauce is bubbly.
Serve each steak, topping with sauce (and onion, if desired) from pan. We sided ours with a bit of salad, and a lovely heap of mashed potatoes.
Delicious!!! Did I happen to mention she also made an apple pie? You're jealous now, aren't you? You should be!! Thanks for dinner, Lizzy:-)
And in case you're wondering how wintry it was while we were visiting. . .
Have a Smothered kind of day ~
Robin Z
