We Lovingly Call it P-O-O Soup

It's name may be rather odd, but this soup is quick, easy, and delicious!

Another of Hubster's creations, this one is a throw-back to his Mama. And though my penchant for acronyms makes its name somewhat worrisome, there's no need for brow furrowing. Potato-Onion-Oyster (otherwise known as Poo) soup is positively tasty and I'm thankful Hubster loves it enough (despite our teasing) to make it for us at least once or twice a year:-)




Now, before you get all worked up that there are no specific measurements - remember that this leaves you open to easily adjust each batch for how many people you need to serve. This also means fewer dishes - no measuring cups or spoons;-)

Potato Oyster Onion (Poo) Soup

White or yellow potatoes (1 to 1-1/2 per person)
White or yellow onion (to taste - about 1/8 per person)
Celery (optional - and to taste)
Canned oysters (1/2 - 1 can per person)
Milk (enough to cover ingredients - 1 cup per person)
Black pepper (to taste)

Get your favorite soup pot out.  Dice your potatoes and toss into soup pot.


Dice your onion and add to potatoes.


If desired, chop the celery and add to potatoes and onions


Add water to your soup pot to just a bit above the level of the vegetables



Cook on medium-high until potatoes are fork tender - 20 - 30 minutes (depends upon amount of vegetables and water), stirring occasionally and adjusting heat as necessary to avoid boiling over. Add oysters


Add milk to right below level of vegetables and oysters




Stir it up


add pepper to taste, and simmer soup over medium heat, stirring occasionally, until heated through and piping hot.


We like to serve Poo Soup in pasta bowls


With cheese (you see Dimcock Dairy Cheddar Cheese Curds here - yum!!!) and crackers on the side.
