Yes. Broccoli as Comfort Food

I like broccoli. Would I consider it comfort food?  Not really. . . But Hubster had a broccoli-rice side-dish at a BBQ restaurant when he was traveling a few weeks ago and couldn't wait to come home and make one (that would be the broccoli thing, not the restaurant) of his own.  Once again, Hubster's come up with a winner!



Broccoli Rice Bake

5 cups broccoli - fresh or frozen
1 cup rice
1 Tbsp butter
1 bunch celery, chopped
1 onion, chopped
1 10.75 oz can condensed cream of mushroom soup
1 10.75 oz can condensed cream of chicken soup
1-1/4 cups water
1 lb American cheese
salt and pepper to taste
1-1/2 cups bread crumbs


Prepare broccoli to fork tender and prepare rice according to package directions. 

Meanwhile, Preheat oven to 350 degrees and line 9 x 13 baking dish with foil and spray with non-stick spray. Set aside.

There's plenty of time to melt butter in a large skillet over medium-high heat while chopping celery and onion.  Add celery and onion to skilling and saute until soft.  Set aside.



In a medium saucepan over low to medium heat, mix both cans of soup and water.  Mix until smooth.  Gradually stir in pieces of cheese until melted - watching that cheese doesn't stick and burn to bottom of pan.  Set aside.



In a large mixing bowl, combine broccoli, rice, celery and onion, and soup and cheese mixtures.

 Season with salt and pepper.  Pour mixture into prepared pan and top with bread crumbs.



Bake in preheated oven for 45 minutes until bubbly and light brown.



I have to admit. . . I did have my doubts about this recipe - but it was quite filling, tasty alongside chicken and barbecue beef, and reheated in the microwave very well:-)
