I originally came across this recipe in a Bed & Breakfast cookbook that my Tootsie (my name for my Mom's Mom) gave me for Christmas. Mmmm. . . so good. But me, being me, I had to tweak it a bit here and there to make it *just right* for us. . . and here's what I came up with:
Orange French Toast
3/4 cup butter, melted
2 tsp vanilla
1 cup dark brown sugar
3/4 tsp cinnamon
3 tsp orange peel
1 cup chopped pecans
Preheat oven to 350 degrees. Line large jelly roll pan with foil and set aside. In small mixing bowl, combine all ingredients and spread evenly onto bottom of pan.
1 loaf French bread, thickly sliced
8 eggs
1-1/3 cups orange juice
Beat eggs, blend in orange juice until well-combined.
Dredge bread slices through liquid
and place snugly onto pan
covering the nut mixture -
you can overlap pieces slightly, or squeeze together to fit more in.
Bake in 350 degree oven for 20 minutes.
Serve (or flip over each piece onto platter) immediately.
Orange-y! Nutty! and oh! So impressive to serve and definitely YUMMY!!! No syrup or toppings are necessary on these bad boys. . . unless you're like Hubster who feels that ALL varieties of waffles, pancakes, and French toast *require* syrup. . . :-)
