How to Slushify a Rough Day

Ever have one of those days?  One of those non-stop, not-going-your-way, full of difficult decisions and seemingly never ending detail laden kind of days?  Yup.  That was today for me.  Simply put - Tuesday, June 29, 2010 was, well. . . Full Of It!

The first step was to simply throw my hands up in disgust, get my butt out of my office chair, stand up straight, force a smile and walk out.  Yup.  I walked out of my office today.  Left phones ringing and e-mails unanswered.  Enough was enough.

To tide me over until Cocktail Hour, I made a double batch of chocolate chip cookies with my son and enjoyed a couple while sitting on the back porch soaking in some fresh air (and attitude).

I snoozed a bit and had visions of Bourbon Slush in my head. . . When I awoke and checked the freezer - Lo and Behold!  It wasn't a dream!  There it was!!!  Bourbon Slush!  Forward-thinking Hubster made sure the freezer was Slushified.  What a good, Good, GREAT man!

Bourbon Slush Punch

1 (6 ounce) can frozen orange juice concentrate, thawed

1 (12 ounce) can frozen yellow lemonade concentrate, thawed
1 (46 fluid ounce) can pineapple juice, chilled
1 1/2 cups white sugar
2 cups strong brewed black tea, cooled
3 cups bourbon whiskey
1 (2 liter) ginger ale, chilled

In a large bowl or container, mix together the orange juice concentrate, lemonade concentrate, pineapple juice, sugar, tea, and whiskey.

Transfer to any freezer safe container(s) (we use cereal keepers as they fit well in the freezer and are easy to grab onto when scooping the punch out) and freeze overnight until nice a slushy (it will not freeze hard due to the alcohol content)

Remove the frozen mixture from the freezer and place scoops of the frozen slush into glasses.  Top off with the ginger ale.

Ah. . . . that's better!  Look at that optimistic blue sky.

Go ahead Wednesday, bring it on!  I've got Slushie on my side:-)  Oh, and those chocolate chip cookies?  Why, they go grand with Bourbon Slush Punch.  Be watching for that fabulous cookie recipe!

Have a slushy kind of day ~
