Menu Monday - Shrimp Sized

You won't believe the size of these shrimps that Hubster came across in the grocery store - they are HUGE. Definitely not your typical 'shrimp' - that's for sure!  And at a bargain price - The Best.  Hooray for Hubster! 

We decided, in honor of the first BBQ of the season we were invited to, we would make some awesome shrimp-pepper-pineapple skewers for the grill.  So good!

We've made variations of this glaze in the past, but here's the recipe we used this weekend:


Spicy Skewer Shrimp and Friends

1/3 cup lime juice
1/3 cup honey
1 teaspoon soy sauce
1 teaspoon vegetable oil
2 Tbsp Jamaican jerk seasoning
3 dashes hot pepper sauce
salt and pepper to taste
2 pounds shrimp - peeled and deveined


1.  Stir together all ingredients except shrimp.  Add shrimp and toss well to coat.  Cover and refrigerate for one hour to marinate.  Soak wooden skewers in warm water.

2.  Preheat outdoor grill on medium-high heat.

To make skewers:

1 can pineapple chunks, drained
1 sweet red pepper, chunked
1 sweet green pepper chunked
10-12 wooden skewers, soaked in water for 1 hour

Alternate 3-4 pineple chunks, pepper chunks, and 2 marinated shrimp onto a skewer.  Grill skewers on preheated grill on both sides until shrimp are pink and opaque - about 5 minutes per side.   ENJOY!





Unfortunately, excitement for the BBQ and eating the shrimp overwhelmed my camera urge so there are no pics of actually *cooked* skewers.  Trust me when I say they were Beautiful AND Delicious!
